You will need:
- ready made mini pastry tarts
- fresh strawberries
- tools: whisk and pipping bag & nozzle
- eggs (2)
- 1 cup heavy cream
- 1 1/2 cup milk
- 2 tbs cornstarch
- 1/2 cup sugar
- vanilla extract
I bought the ready made mini pastry puff so it saved time baking the mini tarts. But feel free to make one from scratch (perhaps I’ll share the recipe someday). Beat two eggs and whisk in a bowl.
Start making the custard filling, you need to heat the milk in a small saucepan. Mix and whisk sugar, heavy cream and cornstarch and bring just to a simmer.
Whisk the 1/3 mixture into to temper eggs. Pour it back with the rest of the mixture in a saucepan. Heat the mixture on the medium heat until thicken.
Remove the heat and add vanilla extract. Move the mixture into a bowl and cover it up with cling-film. Keep it in the fridge to let it cool. Meanwhile, prepare the fresh strawberries. Take one by one and cut it half.
Using a pipping bag and nozzle, start filling the tart with custard. Decorate each mini tart with strawberry clusters.
